Masala Idli upma

Ingredients

Steamed idlis - 6 to 8

Onion - 1 chopped

Tomato - 1 chopped

Green chillies - 2

Mustard seeds - 1 tsp

Channa dal - 1 tsp

Bay leaf - 1

Cinnamon stick - 1

cardamom - 2

star anise - 1

Gingelly oil - 1 tbsp

Ghee - 2 tsp

Turmeric - 2 tsp

Salt - 2 tsp

Ghee - 1 tbsp

Method

Cut the veggies. In a pan, add gingelly oil. Once it is hot, add mustard seeds. Once it splutters add channa dal. Fry bay leaf, cinnamon stick, star anise, cardamom.  Once it turns brown add the veggies. Fry them for 10 minutes. Add chopped onions. Fry them till they are transparent. Add diced tomatoes. Add 1 tsp turmeric powder along with 1 tsp salt. Saute them well. 

Cut the steamed idlis in cube shape. Add them to the tempered masala mix. Mix them gently.  Add ghee. Add 1 tbsp of idli podi. Mix well. Garnish with chopped coriander or curry leaves 🍃 . Add 1 tbsp of chopped onions and garnish on top of idli upma. Yummy idli upma is ready to serve.
