Vegetable uthappam

Beans - 1/4 cup

Carrot - 1/4 cup

Onion - 2 chopped

Tomato - 2 chopped

Mint leaves - few

Coriander leaves - few

3 cups dosa batter

Ghee

Heat a dosa tawa. Rub it with half onion over the tawa. Take 1 ladle dosa batter and spread it in a round shape evenly. Let it be slightly thick don't spread very thin. Spread the carrots, beans, tomatoes, onions, mint and coriander on top of the uthappam. Press the toppings gently on top of the uthappam. Sprinkle ghee around the uthappam. Flip the uthappam carefully or cover it with a lid. Cook until it is golden brown. Vegetable uthappam is ready to serve with chutneys
