Mint/Pudhina rice

 

  • 2 cups Mint Leaves
  • 1 cup Cooked Rice
  • 2 tablespoon Whole Urad Dal
  • 1 Green Chili
  • ¼ tsp Tamarind Paste
  • 1 tablespoon Cooking Oil

  • 1 tsp Cooking Oil
  • 1 tsp Cashews
  • 1 tsp Mustard Seeds
  • 1 tsp Split Urad Dal
  • 1 tsp Channa Dal

  • Rinse the Pudhina leaves(Mint Leaves) and coriander leaves well in water and drain the water and keep the leaves aside. Heat oil in a pan. 
  • To that add the rinsed Pudhina(Mint Leaves) leaves and coriander leaves and fry for sometime till its raw smell goes off
  • Grind these in a mixer along with salt, a pinch of tamarind and grind it without adding water
  • Heat the oil/Ghee in the pan and add mustard seeds.When the mustard seeds start to splutter, add channa dhal, uridh dal and cashew nuts and fry until it becomes golden brown color
  • Now add the ground pudhina(Mint Leaves) mixture and mix them well. Switch off the stove. Add the mixture to the cooked rice and mix well without any lumps. Add some Ghee and mix well.

  • The delicious Pudhina(Mint Leaves) rice is ready to serve.
