Idiyappam
Rice flour - 2 cups
Oil - 1 tbsp
Water - 1 1/2 cups or little more
salt - 1 tsp
Seive rice flour and set aside.
In a pressure cooker add water, oil and salt. Close the lid. Switch off the gas after 1 whistle.
Add the rice flour and mix well
Close the pressure cooker with whistle and let it be warm for 15 minutes. No need to switch on the gas. Let it rest for 15 minutes.
Open the cooker. When the dough becomes warm start kneading with ur hands and you will be able to roll a non-sticky and soft yet firm dough.
Now take the idiyappam press, grease it with oil and fill the dough.
Apply 1tsp oil or ghee to the idli mould and spread it. Squeeze the idiyappam onto the idli plate.
Close the idli cooker. It will take just 2-3 minutes to cook.
Remove after 2 minutes. Idiyappam will drop easily without sticking from the plate.
Delicious healthy Rice flour idiyappam is ready to serve.
Serve with vendhaya mor kuzhambu.
