Cauliflower roast

Ingredients

Dosa batter- 3 cups

For cauliflower masala

        1 big sized cauliflower

        1 medium sized onion chopped

        1 medium sized tomato 🍅  chopped

         2 tbsp oil

         1 tsp mustard

         1 tsp urad dal

         1 tsp channa dal

         1 red chillie

         Few curry leaves

         Asfoetida - a pinch

         Green chillies - 2 slit

         Ginger - 1 inch

         Coriander leaves - few

Making of Cauliflower masal

Separate the florets in a big sized cauliflower. Boil the florets with 1/2 cup water, 1 tsp turmeric powder and 1 tsp salt. Chop 1 onion, 1 tomatoes, 1 inch ginger and 2 chillies. In a pan, add 2 tsp oil. Add 1 tsp mustard, urid dal. Add 1 bayleaf, 1 cinnamon stick, 2 cardamom, 2 cloves. 

After 30 seconds, add the chopped onion, tomato, chillie and ginger. Add 1 tsp of chillie powder, 1 tsp salt and 1 tsp turmeric powder. Mix well. Cook for 5 minutes. Drain water from the cauliflower florets. Add the boiled cauliflower florets and mix them well. Cook for 10 minutes. Cauliflower masal is ready.

In a dosa pan, spread dosa batter thin.      Place 2 tbsp of cauliflower masal in the      centre. Sprinkle ghee around the dosa.        Roast dosa until it turns golden brown.        Don't flip the dosa. Place the crispy masal dosa on the plate. Serve hot with chutney.
