Urid dal vadai/ulundha vadai - tamil new year special- ilai sapadu
urad dal - 1 cup
rice - 1 tbsp
Asfoetida a pinch
salt - 4 tsp
finely chopped 2 chillies
grated ginger - 1 tsp
Few curry leaves, chopped
cumin - 1 tsp
Oil, for frying
In a bowl take 1 cup urad dal, 1 tbsp rice and rinse well. Soak for 4 hours making sure the dal is soaked well. Drain off the water and transfer to the mixer jar. You can also grind in grinder for better texture. Grind to smooth paste adding water as required. Make sure to add very little water as it helps to make the batter thick. Transfer the fluffy batter to a large plate. Add asfoetida , salt and whisk well.
Add 2 chilli, 1 inch ginger, few curry leaves, and 1 tsp cumin. Mix well making sure everything is well combined. Place a ball-sized batter and make a hole in center. Drop down gently in medium hot oil. Flip over and fry on low to medium flame. Fry till the vada turns golden brown and crispy. Drain off.
