Tomato uthapam

Ingredients

2 to 3 cups of idli batter

2 tomatoes cut into thin slices

few coriander leaves

ghee


Cut the tomatos into thin slices. Pour about 1 cup of batter on a tawa. Spread it evenly into a round shape. Gently place about 4 tomato slices on the uthappam.

Place a few coriander leaves around the tomato slices and pour a few drops of ghee around and on the uthappam. When the edges of the uthappam starts to leave the tawa, gently flip it over. After a minute or so, flip back gently and make sure the side with the tomatoes is cooked. Keep the flame at medium at all times.
