Mango pachadi
Mango pachadi - tamil new year special
Oil - 1 tsp
mustard seeds - 1 tsp
Fenugreek - 1 tsp
1 pinch asafoetida
mango(1) cut to cubes
turmeric powder - 1 tsp
water - 1/2 cup
jaggery - 1 cup
Veppampoo - 1 tbsp
Heat oil in a wide pan and crackle mustard seeds, fenugreek, ginger and add asafoetida. Add chopped mango pieces, a pinch of salt and fry for a minute. Mix in turmeric powder and sprinkle water for the mangoes to get cooked. Close and cook until mangoes are soft. Fry veppampoo and add to the mango pachadi
Add jaggery to the mango mix. Let it melt. When the jaggery melts, mix and let it shrink until it gets to a jam-like consistency. Do not over mix to mash them.
